Apple and Walnut Muffin


Apple, walnut and raisin muffins.

2 cups all-purpose flour
1/4 cup granulated sugar
2 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup chopped walnuts
1 cup milk
2 large eggs
1/4 cup vegetable oil
1 small tart green apple, peeled and chopped
1/4 cup golden raisins
  1. Heat oven to 400*F (205*C). Grease and flour a 12-cup muffin tin or line with paper liners.
  2. Combine flour, sugar, baking powder, cinnamon, salt and walnuts in a medium bowl; make a well in the center.
  3. In another bowl, mix milk, eggs, oil, apple and raisins in small bowl. Pour mixture into well. Mix batter until just moistened; do not over mix.
  4. Fill prepared muffin tins three-fourths full. Bake for 18 to 20 minutes or until muffins test done. Cool in pan on wire rack.

Makes 1 dozen muffins.
