Pandan Kaya Cake


Delicious Pandan Kaya Cake baked by me

250 gm. butter
200 gm. sugar
1 Tbsp. Kaya
6 nos. eggs
300 gm. cake flour
1 tsp. baking powder
200 gm. coconut milk
1/4 tsp. salt
3 Tbsp. milk powder
1 tsp. pandan paste
a drop of green colouring

Method:

(1) Cream butter and sugar till creamy. Add in Kaya.
(2) Add in egg one at a time and make sure it's properly mixed before adding in another egg. Pour in coconut milk and salt slowly and if it cuddles, put in some flour. Add in pandan paste and some green colouring.
(3) Fold in cake flour, milk powder and baking powder and then pour into a 7"tray and bake at 175C for about 60 mins.


Cream the butter till light in colour


Whisking the egg, sugar, ovalette(optional) and corn flour. Then add in coconut milk and milk. Add the butter mixture and Kaya pandan paste.

Sponge Cake


Sponge cake with raspberry

4 eggs
120 gm. sugar
100 gm. cake flour
65 gm. melted butter or cornoil
1 tsp. vanilla essence

Method:

(1) Whisk eggs and sugar till light and fluffy.
(2) Fold in the cake flour lightly taking care not to deflate the eggs.
(3) Pour in melted butter and vanilla essence and stir lightly.
(4) Pour into a 9" round cake tin and bake at 175C for about 40 mins or till a skewer comes out clean.


Spread the raspberry jam onto the sponge cake.


Cut the sponge cake into half and stack them up.

Pandan Macadamia Muffins

250 gm. Self-raising flour
1 tsp. Baking Powder
100 gm. Castor Sugar
2 medium size eggs - lightly beaten
180 gm. Evaporated Milk
80 gm. butter
5 blades of Pandan leaves - blend with milk
a drop of (pandan paste)
Some macadamia nuts - cut into half for top
Method:

(1) Cream the butter and sugar together until creamy.
(2) Add in beaten egg gradually and then add in the pandan milk.
(3) Add in pandan paste.
(4) Sift the self raising flour and baking powder twice and then mix into the
butter mixture and stir gently. Do not overmix the batter, it should be lumpy.
(5) Pour batter into muffin cups and put about 4 pcs. of macadamia nuts on top.
(6) Bake at preheated oven at 200C for about 25 mins.


Mixture ready to be baked.

Chocolate Banana Sponge Cake

Chocolate Banana Sponge Cake

3 nos. Extra Large egg yolks of about 90 gm. each (or use 4 medium eggs of about 60 gm. each)
100 gm. castor sugar
120 gm. Self Raising flour
1/2 tsp. Baking powder
1/2 tsp. Bicarbonate of Soda
50 gm. Corn oil
1 teasp. vanilla essence

3 1/2 X.Large egg white (or use 4 1/2 medium eggs)
1/4 teaspoon Cream of Tartar
60 gm. castor sugar

30 gm. cocoa powder + 120 gm. of hot water - stir till smooth

Method:

(1) Mix egg yolks, sugar, oil, SR flour, baking powder, bicarbonate of soda and vanilla essence into a mixing bowl and stir with a wooden spoon.
(2) Add in cocoa mixture and stir together till smooth.
(3) Beat egg white with cream of tartar for 2 mins, then pour in sugar gradually till egg white becomes fluffy but not too stiff.
(4) Fold the egg yolk mixture into the egg white mixture. Do not overmix otherwise the egg white will be deflated and the cake will sink. If you feel that you are mixing too long and can still see traces of egg white it means that you have overbeat your egg white. Stop mixing anymore, don't worry about the egg white traces, just pour into a 9" round cake tin and bake.
(5) Bake at 175C for about 50 mins. or till cooked.
(6) Cool the cake on wire rack and then slice into 3 layers.

Chocolate mousse:

250 gm. Non-Dairy Whip Cream
150 gm. Dairy whip cream
1 tsp. Vanilla essence
1 level Tablespoon of Gelatine powder - mix together with- 4 Tbsp. water and microwave for 20 secs
50 gm. Cocoa powder ) mix together
80 gm. icing sugar )
1 1/2 Tablespoon of Nescafe )
1 1/2 Tablespoon of hot water ) mix together
1 Tablespoon "Kahlua"

2 large ripe Del Monte Bananas - slice thickly

Coating for the cake: Put into a mixing bowl and double boil till mixture thickens.
Cool before pouring onto cake.

35 gm. cocoa powder
50 gm. sugar
150 gm. Dairy whipping cream
80 gm. chocolate - chopped
30 gm. Butter

Method for the mousse:

(1) Beat the two whip cream separately.
(2) Mix all the ingredients together.
(3) Spread 1/3 of the mousse on the first layer of sponge cake, lay the slice bananas on top and then top up with another layer or sponge, continue till the last layer of sponge is used up.
(4) Cover the whole cake with the balance mousse and keep in the refrigerator till the mousse sets.
(5) Pour the coating onto the cake and let the chocolate mixture flows down the side smoothly.
(6) Decorate the cake and put into the frige till coating sets.
(7) Slice with a warm knife and serve.

Chocolate Banana Cake


When the sponge cake was baked, left it to cool before slicing into half and put the mousse and banana.

Peanut Butter Muffin

Firstly, I creamed about 60g butter, 50g peanut butter and 190g of sugar until light and fluffy. I used 2 eggs (beaten) and slowly added into the mixture tablespoon by tablespoon and continued beating. I sifted 225g cake flour, 1 tsp baking powder and half tsp baking soda. I added some flour into the mixture followed by half cup of sour cream (or yogurt). I continued beating then added in the rest of the flour and another half cup of sour cream. Then I put the mixture into the muffin cups and baked about 30mins at 180C. (Preheat the oven first)

Pork Floss with Cheese Buns



350gm bread flour
50gm egg beaten
155gm cold water
70gm caster sugar
8gm instant yeast
1 tsp salt
1 tsp bread improver
60gm margarine

beaten egg for glazing
slice cheese

120gm pork floss
50gm mayonnaise
1 tbsp condense milk
50gm soft butter

Put the bread flour, instant yeast, sugar, salt and bread improver into mixing bowl and let it mix for 1 min.
Pour in cold water and egg gradually and beat for 10mins
Add in margarine and beat for another 5 mins until the dough is smooth.
Rest the dough for 45min covered with a wet cloth.
Divide the dough into 60gm each and let it rest for 10 mins
Roll out the dough and wrap with fillings. Lay onto baking tray and let it rest for another 45mins
Pre-heat oven 190C and then glaze the bun with beaten egg and put a slice of cheese on top.
Bake for 10-12 mins

Tapioca Kueh

Grate the tapioca and then washed it under running water. (I had no receipe to refer so I decided to try out in my own way.)
The grated tapioca weighed about 880gm so I mixed it with 250ml of coconut milk, 200gm of sugar and a pinch of salt. Place a few pandan leaves.
Then steamed about 15 mins and when it was cooked, let it cooled down.
Rolled the tapioca kueh onto the grated coconut.


The grating of tapioca took a while.


Mixed 250gm of coconut milk, 200gm of sugar (250gm - if want sweeter) into the grated tapioca. Put a few pandan leaves on top and ready to be steamed.


After steaming about 15 minutes, it was cooked. Cut it only when you wanted to eat.


Rolled the tapioca kueh on the grated coconut and was ready to be eaten.
It was wonderfully flavourful.

Chocolate Chips Muffins

280gm self-raising flour (sifted).
1 large egg
120 sugar
1/2 tsp salt
180gm butter
100gm milk or buttermilk
1 tsp vanilla essence
120gm chocolate chips

Add in butter and rub with the flour.
Add in sugar, salt and mix well.
Mix wet ingredients together: egg, milk, vanilla essence and add into dry ingredients. Stir lightly and do not overmix.
Add in chocolate chips and scoop batter into paper cups 3/4 full.
Bake at 200c for about 20mins.

Banana and Walnut Muffins

1 1/4 cup all purpose flour
1/4 cup sugar
1 1/2 tsp baking powder
1 cup walnuts chopped
2 large ripe bananas, cut
1/4 cup milk
2tbsp butter, melted
1 egg (beat)
1/2 vanilla essence

Preheat oven 375F
Sift flour, baking powder and salt into a bowl.
Add sugar and walnut and stirred to combine the dry ingredient.
Add milk, melted butter, beaten egg and vanilla essence and mixed them together.
Mix all the ingredients.
Do not over-mix and bake 20-25 mins.
