Pistachio Muffin


Pistachio Muffins

Method: 1. Preheat oven at 180C.
2. Sieve 1 1/2 cup of self-raising flour and add in 1/2 cup of brown sugar or castor sugar.
3. Beat 1 egg and 1/2 tsp vanilla essence together, add 1/2 cup of milk, 1/2 cup of yoghurt and 100g of melted butter into the flour mixture. Add in about 1/2 cup of grinded pistachio and 1/2 cup of pistachio cut in cubes. Fold together.
4. Spoon mixture into the muffin cups and bake for about 30mins or until skewer comes out clean.
Make 6 muffins.
