Ginatan


Ginatan (Filipino's dessert)

Sweet potato - cut into cubes
Yam - cut into cubes
Glutinous Rice Flour - add water to make into ball
Sago
Coconut milk
Sugar

Donut

1/2 cup warm milk with 7gm yeast - mix well and set aside for about 10 mins
1 cup water
1/4 cup margarine
1/2 cup caster sugar
2 eggs
4 cups multi purpose flour - shifted
1 tsp salt
pinch of cinnamon powder

Heat the water with margarine and sugar until well mixed. Set aside until it is almost cool. Add in the yeast mixture.
Add in eggs, multi purpose flour, salt and cinnamon powder. Knead for 10 mins. Put the dough in a greased bowl. let the dough spread unitl it becomes 2 times bigger.
Knead the dough again and roll out the dough and into 1.5cm thickness. Cut the dough with doughnut cutter. Put it on a greased tray and let it spread until it becomes 2 times bigger.
Fried with preheated oil until golden brown. Decorate it to you liking.

Mango/blueberry/Jackfruit Muffin


Mango Muffin

Mango or blueberry Muffins

Ingredients: 125g butter
3/4 cup caster sugar
2 eggs
2 cups self-rising flour
150ml fresh milk
1 1/2 cup fresh blueberries or cut cubes mango

Method: Preheat oven 180C
Beat butter and sugar in a small bowl with electric mixer until light and
fluffly. Beat in eggs, one at a time, and stir in flour and milk in two
batches. Mix well. Add in 1 cup of Blueberries or cubes mango.
Spoon mixture into paper cups and add some blueberries on top. Bake for 30
mins.
Before serving, add whipped cream (Optional) and blurberries on top. Dust
sifted icing sugar.

Ingredients: "A" Mixture - 250g cream cheese, softened
20g caster sugar
1 egg

1. Beat cream cheese with sugar until light and fluffy.
2. Beat in egg and well mixed.

"B" Mixture - 180g butter, softened
150g sugar
3 eggs
3 tbsp cocoa
120g self-raising flour
1 tsp sieving baking powder

1. Sieve flour, baking powder and cocoa together and leave aside.
2. Beat butter and sugar until light and fluffy.
3. Add egg, one at a time and beat well.
4. Fold flour mixture into egg mixture.
5. Pour half of "B" mixture, then all of "A" mixture then followed by "B" mixture.
6. Bake in preheat oven at 180C - 45-50mins.

Mentaiko Tobiko Pasta


Mentaiko Tobiko Pasta

1 small onion, diced
100g bacon, thinly sliced
2 tbsp butter
1 packet mentaiko (usually has 3 to 4 sacs)
2.5 tbsp Japanese mayonnaise
1 small packet tobiko
nori
150g angelhair pasta

Put the butter and the mayo in a mixing bowl. Scrape the mentaiko out of the sacs and into the bowl. When the butter is soft, mix the ingredients together. Sauté the onions and the bacon. Mix them into the mentaiko sauce. Boil your pasta. Drain the pasta and mix it with the sauce. Now plate the pasta. Over the pasta, sprinkle some of the nori and spoon some tobiko over it.

Chocolate Cheese Cake

Beat 250 cream cheese with 60g sugar until light and fluffy. Beat in one egg until well incorporated and set it aside.
Sieve 120g self-raising flour, 2tbsp cocoa powder together and put aside. Beat 180g butter and 150g sugar until light and fluffy. Add 3 eggs, one at a time and beat well. Fold flour mixture into egg mixture. Pour half of the mixture then add the cheese mixture then followed by the remaining mixture. bake in preheat oven at 180C for 45-50mins.

Mushroom soup


Fresh Mushroom soup

I used 2 packets of white mushroom and 1 packet of brown mushroom. Cut into slices and add in 1 onion (cut in cubes) and 1 celery (cut in cubes). Add water and cooked till soft. Scooped out the mushroom mixture and blend it. Pour it back to the soup and cook. Add some cream milk, chicken stock and salt.

Minced meat with prawn wrapped in wonton skin. Ready to be cooked. I shaped it liked wonton instead of sui kow.

1 cup All purpose flour
1/4 cup Cocoa powder
1 cup Castor sugar
1/4 cup Butter
3/4 cup Milk
1 nos Egg
1 tsp Baking powder
1/4 tsp Baking Soda
1/2 tsp Vanilla essence
1/2 cup Chopped Walnuts

Method:

1. Sieve Flour, baking powder, soda and cocoa together. Mix in the Walnuts. Keep aside.
2. Beat the butter with sugar till light add in the eggs and vanilla and beat for 2 mins.
3. Add in the flour, Walnuts and cocoa mixture slowly alternating with milk and mix very lightly but firmly.
4. Pour into a greased 8 inch dish and bake at normal temp for 35 mins or till done.
Alternatively for those of you who love the peanut flavour you could:

Instead of 1/4 cup butter you could add 2 tbsp butter and 3 tbsp peanut butter and follow the rest of the recipe in the same way!
