Cranberry with Mango Scones


Cranberry with Mango Scones baked by me

3 cups flour
1 3/4 tbsp baking powder
1 cup rolled oats, grounded in food processor till fine
1/2 cup brown sugar
100g cold butter
100g dried canberries, soaked in boiling water for 10mins then drained and chopped
100g dried mango, diced
1 1/2cups of buttermilk
extra butter to brush tops
extra brown sugar for sprinkling
Jam and cream to serve

1. Preheat oven at 200C, sift flour and baking powder together, combine with ground oats and sugar.
2. Add butter - use fingers to rub the mixture til it resembles bread crumbs.
3. Add cranberries and mango to the mixture. Pour buttermilk over and gently knead into a dough. Do not over-knead.
4. Put the sticky dough on a floured board. Shape it into a 2cm thick circle. Use a round cutter about 4cm wide to cut the dough. Place cut dough on a greased baking tray. Brush the tops with butter and sprinkle some brown sugar over.
5. Bake for 15mins or till the tops are slightly brown. Serve hot with jam or cream.
