Pistachio, Peanut, Macadamia and Hazelnut Cookies.

Walnut cake
12 eggs, separated
1 cup cold water
3 cup sugar
1 tsp vanilla
2 1/2 cup flour, sifted
1 1/2 tsp cream of tartar
1 tsp salt
1 1/2 cup walnuts, chopped fined
Beat egg yolks until thick and lemon colour. Add water and beat well. Beat in sugar and gradually add flavouring. fold in Flour, salt and walnuts.
Beat egg whites and cream of tartar till stiff, then fold into yolk mixture. Decorate the top with some chopped walnuts.
(Can bake about 3 - 8inches round pans)
Place paper in the base. Bake at the lower rack 30mins. Then put the aluminium tray (prevent the top being burnt) in the middle of oven to continue baking another 30mins..
