
Pistachio cookies
240g butter
3/4 cup icing sugar
2 cups clour
1 tsp baking powder
180g pistachio ground
1 egg yolk
1 tsp vanilla essence
Sift flour and baking powder together.
Cream butter and icing sugar. Add egg yolk and vanilla.
Fold in the flour and ground pistachio. Mix until it forms a dough.
Roll dough to about 1/4 inch thick and cut with cookie cutters.
Brush with egg wash.
Bake 160C for 20-25mins until golden brown.
